Our Mexican Friday night was a great success – 22 “youth” from our shul, plus our 2 youth directors and us, made over 30 people. The room looked good – black serviettes, with pink, orange and turquoise. Food was delicious:
Chicken wings with fajita marinade, black bean and red pepper dip, pineapple salsa, roasted garlic, Mexican pickles
Chicken soup with lime and chilli, flour tortillas
Chilli con carne, Chicken with Mexican spice rub, rice, refried beans, Tofutti sour cream, guacamole, tomato salsa
Mexican brownies and marmalade icecream
Just as well it was good, because we have loads left over! I’m not sure if the kids filled up on challah and didn’t have room for the real food, or if I overcatered, but either way, there’s no shortage of leftovers this week.
Plus we had leftover pizza from the chaplaincy melave malke, which went down very well for breakfast.
One does always wonder – are the Mexican kids sitting there enjoying chopped liver and kugel??
